The Roaming Butcher is a craft butchery built to meet the need for Louisiana Department of Agriculture-inspected processing. Local farmers—regardless of their size—can work with us to harvest and package their steers, pigs, lambs, and goats for personal use or for wholesale or retail sale. And The Roaming Butcher can connect consumers with farmers’ products and specialty meats.
Craig Smith, owner of Smith Family Farms, developed and initiated a plan to bring year-round inspected processing to Northwest Louisiana. He partnered with Jackson McConnico to bring the plan to life. Head Butcher Tyler Murad handles the custom meat cutting. Roger Peterson who learned his craft in California as well as South Louisiana provides the expertise to make excellent specialty sausages and cured meats.
